We are currently working on recipes for pasteurised sauces with a mild pH value. We have used our calculation models and our experience in the scaling-up and validation of this type of recipe, to put together a recipe, in which the microbiological shelf life is guaranteed, despite the mild pH value. The recipe is validated using a combination of accelerated and real-time shelf-life research, that was designed specifically for this purpose.
