There is scarcely any literature about psychotropic strains of Bacillus cereus, even though these pathogenic bacteria represent a considerable risk to food safety in pasteurised, chilled products. Fortunately, after doing some research, we managed to find sufficient relevant literature to be able to substantiate our recipes for chilled soups. Literature research is not so much the ability to search, more the ability to find. Happy New Year, everyone!
