We are currently using literature to substantiate the prevention of the growth of Listeria monocytogenes in chilled products, including salads. Despite the fact that these products do not meet the criteria according to EU 2073 relating to the growth of Listeria monocytogenes, we are able to use literature and predictive modelling to substantiate the fact that Listeria monocytogenes cannot grow.
