We are working for several clients on extending the shelf life of preservative-free salads. We use our smart calculation models to develop recipes with a mild taste profile and a good shelf life. We have developed an all-in-one challenge test dedicated for his type of product, in order to determine the definitive shelf life. In the case of some of the salads we use fresh vegetables and fresh herbs.
