smartfood R&D develops preservative-free dressings for the French retail industry

We are currently working on preservative-free dressings for the French retail industry. For this project we have developed a taste profile that is specific to the French retail industry. In this project we use predictive modelling to estimate the shelf life of the end products. To validate the recipes, we use challenge tests, with the test conditions adapted to suit the Mediterranean climate of this country.
